The Leftover Sandwich

My favorite sandwich for the day after Thanksgiving:


... is made with leftover turkey, stuffing and cranberry sauce on toasted rye bread slathered with mayo. The cranberry sauce and the mayo have to be next to each other so the mayo can absorb some of the cranberry flavor. I made a special trip to the Italian bakery today for rye bread specifically for this sandwich.

    My sister's boyfriend pan fried some of the leftover turkey in butter(very healthy) and I enjoyed mine on a sourdough round with mayo, a layer of stuffing mixed with gravy, and cranberry sauce.

    Mmmm...leftovers! Yum!

  2. This is one of my favorite sandwiches also. I was in NY last year at Christmastime and Starbucks was selling them and I had to have one - delicious!!

  3. Mmm..sourdough is a good choice, too, especially with the panfried turkey!

    I saw a recipe in one of my cooking magazines that called for making a sandwich using leftover turkey, cooked bacon, lettuce, mayo and thin sliced pickles on toasted rye bread. Sounded very good!
